Peel the zucchinis and grate. Put them on a tray, sprinkle some salt on them and let them rest for 5 minutes. Squeeze them into balls, drain and spread on the tray. Grate cheese onto zucchinis. Mince the parsley. Stir fry the onion and peppers with some oil, and spread the mixture on the tray. Crack the eggs, add a fair amount of salt and mint, and mix the pide mixture. Make ten pieces out of the dough, and spread pide mixture on each piece. Fold up the edges of each piece of dough, and bake in the oven. Spread olive oil over pides after baking, and serve.
(Note: Spinach may be used instead of zucchini, if desired.)
